The interface dedicated to categories, accessible from menu Catalog > Categories > Category management, will help you work the various information associated to categories for all shops installed in your PrestaShop backoffice.
You'll see a 'Shop' column in the different properties, in the right handside column, such as name, description and SEO data, that will help you set all required information for each shop.
