Can we change the language of the Sc App interface?

The Sc App interface is available in multiple languages: French, English and Spanish.

You can choose the language in Parameters > Interface language

Note that this option only changes the Sc App interface. This does not change the language of your Shopify store. Collections and products remains in the language set for your shop.
